Breakfast issues... suggestions, anyone?

cold cereal isn't good for anyone, it has so much sugar and no protein (unless you eat that really gross whole grain stuff)

I am diabetic and I bake a lot for my family. I don't eat the sweet stuff... I only take a bite or two...the treat that I make for myself on a regular basis is yogurt. I make a half a gallon at a time because that's how much my yogurt maker holds. I have two of the plastic tub inserts that the yogurt actually goes in so when one gets half empty I start another one.

I eat my yogurt with fruit, nuts and a little Splenda...it is sooooo yummy!!!
 
my son has eating issues because of medication and we dont have a lot of time in the am. I buy him Kashi cookies, trail mix. They have fruit, nuts, sunflower seeds in them and are great in the am or for a snack. They taste pretty ok too. I find them in the organic isle at my grocery store. There are many recipes on Allrecipes.com too for healthy breakfast / snack cookies, muffins and bars.
 
I use hard boiled eggs as a grab and go snack. Make a big batch of pancakes or waffles, freeze them individually, then bag them up and use like eggos. Muffins are always a good bet, too. There are millions of muffin recipes, so you can find some that suit your tastes. Make a couple dozen on the weekend, it will take about an hour total, and then dole them out during the week.

Katys Lighter than Air rolls are fabulous to fix and freeze. I fix them with whole wheat flour and honey instead of sugar. I take them out of the freezer, nuke them for 10 or 20 seconds, then make a little sandwhich with them...either left over ham, or turkey, or I fry and egg and some bacon and make a bacon and egg sandwhich. Terrificly yummy!
