Breakfast issues... suggestions, anyone?

Another thing that we like is a big casserole dish of Apple or Peach Crisp...made with an almond flour and pecan topping.

Scoop out a large dollop into a bowl and pop it in the microwave. My daughter has to be at work very early in the mornings and she takes this with her to work and eats it at her desk.

During the school year, my weekday breakfast/lunch is one can of Diet soda (if I have any) or lots of water.

Then I go home and eat dinner.

I know better, but I need to find a better strategy to make changes. I will be watching this thread!
 
Here is a good make ahead quickie breakfast: Take one dozen eggs, mix them like you were going to scramble them. Fry/ crumble a 1/2 package of sausage in skillet. Add to eggs. Add a 2 cup package of shredded cheese to mixture and put even amounts in a 12 count muffin tin. Bake until middle is firm.

You can freeze these or just put them in the fridge. When you need to heat them up either microwave or toaster oven them.
