I have the worst eating habits ever. I am a healthy eater, but regularly only eat once a day, in the evening. I have a very active lifestyle and this is now taking its toll on my immune system, energy levels etc.

Does anyone have any ideas for breads or anything that I can make once a week, keep in the fridge and then just heat or eat cold? I'm the grab-and-go type. I'm eyeing Katy's oatmeal right now.... any other suggestion welcome! I have to get myself together, before I get sick. No time to be sick!!

what is wrong with an orange or banana??? It is grab and go..

Homemade granola! There are hundreds of recipes online, just choose one that isn't loaded with vegetable oil or sugar. You can also make homemade pop tarts, try Googling it for a recipe. Bagels are a good choice, you can even buy whole grain bagels now.

Ohhh, bananas.... yum. What a great idea! I can't believe I'm so dumb I didn't think of this.

make a big baked pancake (my mother calls it a toastie, but I don't think that that is the real name) cut it up and freeze it and every night take out a piece and put it in the fridge it is good cold with butter or cottage cheese and it is good hot.

ETA: for instructions on how to make the toastie:
Make regular pancake batter, pour onto a lightly grease pan the batter should be about 1 inch deep and bake until firm, at 350 F

I'm going to take a look, I'd like to find something my DH can eat in the car on his way to work....

First thing you need to do is go to Walmart and buy yourself a bottle of daily vitamins...along with a bottle of vitamin D. The vitamin D will boost your immune system...take one in the morning with you daily vitamin and one at night. I take mine with a glass of milk to protect my stomach...no vitamin burps.

Then either buy or make yourself some yogurt and make a batch of homemade granola. Mix a handful of granola into your yogurt and eat that.

If your not a yogurt fan here are a few other things.

MUFFINS THAT TASTE LIKE DONUTS
(posted on Copykats by Lotsofhats, Sept. 1, 2003)

In a large bowl, combine:
1 3/4 cup flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. cinnamon

In another bowl, combine:
1 egg
1/3 cup oil
3/4 cup sugar
3/4 cup milk

Add wet ingredients to dry, and stir only to combine (do not over mix!). Fill muffin tins 2/3 full and bake at 350 for 20-25 minutes.
Meanwhile, melt 1/2 cup margarine or butter and set aside.
Combine 3/4 cup sugar and 1 tsp cinnamon in another bowl and set aside.

Take muffins out, and while they're still hot, dip in melted margarine and then in cinnamon sugar mixture.

You can split it up into two smaller loaf pans but reduce

I'm not diabetic, but feel myself going into insulin shock just reading the suggestions!

Personally, I do have blood sugar issues (not diabetic...but if I'm not careful, it's in my genes...) and while I know I'm supposed to eat breakfast, I find that I'd rather skip the bowls of cereal or really any carbs to avoid having my blood sugar tank mid-morning and then I'm eating everything in sight trying to get my sugar back up. If I do eat breakfast, I have to grab something like an egg with cheese - no bread. It's a total pain as one of my favorite staples are cereal.

Good luck!
