Breakfast issues... suggestions, anyone?

I have the best recipe for banana bread. I make it in cupcakes so that it is easy. The kids LOVE it, and so do we!!

4c flour
2tsp soda
2c sugar
2 eggs
2 sticks soft butter
6 ripe bananas

combine dry ingredients in a bowl set aside. Put bananas in electric mixer and beat until creamy, add the eggs and butter and beat well. Slowly add dry ingredients. Grease cupcake pans or loaf pans and bake at 375 until springy to the touch. Makes 3 loaves or about 36 cupcakes.

I think “burrito’s” are supposed to have beans so here is how to make breakfast tacos, or add some beans and make them officially burritos! Burritos do not have to be fried.

The easiest way is to first brown some pan sausage in a skillet (about ¼ cup per burrito) then break a couple of eggs into the sausage while it’s still in the skillet. Mix the eggs and sausage and cook until the eggs are done.

If you have a gas stove, brown a tortilla over the fire on your stove (they burn quickly). Do NOT try this with an electric stove. For an electric stove you will need to use another skillet or you can just nuke the tortilla for a few seconds in the microwave.

Portion out the sausage and egg mixture onto the tortilla, sprinkle with cheese and fold in half....or roll it.....it all taste the same!

You can get creative and use your choice of just about any ingredient that fits into the tortilla... beans, potatoes, link sausage, left over hamburger, etc.

My very favorite breakfast is potato, egg and cheese but I also really like brisket, bean and cheese with some pico de gallo.

Don’t forget the hot sauce.

Oh, and I could make a week's worth of these in advance, right, wrap them in ziploc bags and freeze, then nuke them in the microwave for three mins or so?
 
Yes. A weeks worth in the freezer should be fine.

You will probably want to heat them on half power until you get a feel for how long to nuke them.

I found that some places use french fries for the tacos instead of regular fried potatoes.

This thread actually finally got me to register! Thanks for some great ideas. I forgot about the egg "muffins" - similar to the recipes they have in the South Beach diet book. You can add spinach, or broccoli, or other veggies if you want. (The scrambled eggs and cheese in muffin cups recipe).

On the breakfast burritos - fold one side of the tortilla up 2-3 inches and then roll the other direction (really folding one side then the other) to make a little package that keeps your fillings from falling out.

I do have type 2 diabetes. My nutritionist and reading on my own have convinced me that no one should have an all carb breakfast, you really need some protein, IMO. Some peanut butter on toast, or on toaster waffles fits the bill for me some days. My fave, especially since my hens started laying, is my microwave egg poacher. In 60 seconds you can hard poach 2 eggs (dont' forget to pierce the yolks or they'll explode), put them on english muffins with a slice of cheese and maybe some sausage or bacon if you want, and you have your own egg "mcmuffin", ready to take out the door. I get the high fiber muffins and it really makes a great easy breakfast. The egg poacher is faster and easier clean up than frying them.

I need to keep trying some of these ideas for my kids - they are 2 and 6 and not interested in much of anything except waffles for breakfast!

Where did you find a microwave egg poacher? That sounds like an interesting and useful gadget. I am assuming it is better to cook the eggs that way----no oil or butter like there would be with frying an egg.
 
I throw all my smoothie ingredients into the blender the night before, put the blender pitcher in the fridge, and in the morning all I Have to do is turn it on. (i'm not a morning person, that's all I have the brain power to do, I also premeasure out sugar and creamer the night before, and put the lid on the coffee cup).

Saddi's smoothie:

4 oz frozen fruit (mixed berries, strawberries, pinapple mango)
4 oz pineapple juice (100% no sugar added)
1/2 block tofu (I've a milk allergy, you can use 4 oz of yogurt if you'd rather)
half a banana (you can buy the ugly black ones, like for banana bread, peel and freeze them in halves)

start on low speed, and rev up as needed. Makes a 16oz glass.
 
I've seen the micro egg poacher in our kroger's hanging quite near the dairy/egg section. I put a tad of butter (1/2 tsp) in but I don't really need anything, I just like it (too much!).
