Bresse Chickens


Batch of ~6 month old roosters that we processed yesterday. Second batch we have done this month. We intended to process them at 4 months, and did get a lot of roosters and some hens done back then, but then got caught with our pants down by some early heavy snow and ongoing subfreezing temps and have been unable to do the rest until recently.

These guys were on pasture in tractors for the first four months, and on mostly layer pellets and poking around the fixed coops in the two months since the snow fell. They were pretty lean at about 3 lbs each.

The one similar age hen that we processed this time was also close to 3lbs and did have a nice fat deposit in the rump, as did all of the other hens that we processed at four months.

We have found that finished weight is about 75% of live weight. I'll look through some of my notes on the sexes/ages/weights at processing to see if there is any other info in there that might be useful for others.
