I am just wondering how often this occurs? I have a mixture of heritage breeds and they had a few hatch out this last spring that after some research pointed to "Brindle" being the color variety. I keep them all in a mixed enclosure for the winter and then separate into different breeding pens to get my desired breeding results. I am guessing that there was some pre-separation breeding. (I guess that's obvious).
Last years birds included:
Blue Slate
Black
Wild color
Narragansett
Cream

Cream ? I am not aware of any cream turkeys.

I am guessing that someone local told you that your turkeys are Brindles but this also is a color that I am not aware of. There are various mottled and dappled varieties.

You can check out many of the varieties at Porter's Rare Heritage turkeys and his Phenotype and Genotype page.

You can also use Porter's Turkey Color Calculator to determine what the offspring could be from various matings.

Any info from more experienced breeders is very welcome!

The Tom is hilarious! Maybe it's genetic because I would like me flock to have toms doing something useful besides strutting all day!
The cream is pretty, you can keep its name, I had one just like it and apparently it's a bourbon red that has some Narragansett's in it which lightens the color.

I think the brindles are red bronzes with some black in them. I'll let you know if I can find anything else out

Your "cream" is most likely a Bourbon Buff but if not is definitely one of the buff varieties. There is a variety that includes Creme as part of the name such as Creme Tipped Buff.

If you want an expert opinion, contact Kevin Porter at Porter's Rare Heritage Turkeys. They also have a group on Facebook that discusses turkey color genetics.

Your "brindle" appears to have some Narragansett in it. I suspect that they are among the many varieties that do not have any reference pictures.
