I have a turkey nest that has 2 broken eggs. Do I try to remove them (because of ants) or will the hen take care of it?

1. Unwanted breeding attempt by a tom when the hen is on the nest. Broken eggs are the least of what can go wrong if the tom has access to the hen's nest. Other possibilities can be an injured hen and in the worst case, the tom can accidentally kill the hen.

She’s the only hen. I think she broke them. Haven’t noticed Toms around it. Thanks for the tips!

Mine do better with at least 3 hens per Tom

Two toms and one hen is too many toms. Even if you didn't happen to see them around the nest, they are probably the reason for the broken eggs. With two toms and one hen, it would not be surprising if her eggs are not fertile as the toms will do their best to prevent each other from breeding her.
