I'm in central Texas, too. Thanksgiving Day we were all in short sleeves and my kids wore shorts. Temps were around 75+. Within a 15 minute period, the cold front blew in and temps dropped to the 40s. Last night was below freezing and tonight we'll get down to 22*, mighty cold for our parts. Daytime temps get up to 50ish in the winter. My chickens never see snow.

I also have an open air coop, it's actually a chain link dog run with a tarp over the north end. Works great for here!

That cold front ruined everything..it was nice, and then that thing blew in, blew my hickory tree down on the neighbors fence, and it's a whoppin 28 degrees now. Stinkin cold front!!

It could have at least left my tree alone

That wind was crazy!
