How about them, indeed.

So my six alleged pullets are 3 weeks old. Four of them are quite a bit larger and more feathered out than the other two. They all seem perky and content. I've been reading "Ongoing Selection of Breeding Stock," and as far as I can tell I should wait until 16 weeks of age to assess their growth relative to the breed standard. Is that correct?

Also, (and here you can laugh or smirk sarcastically) I am just now fully realizing that "cull" ends in "killing." Yikes, man.
 
Yes, many times culling ends that way. It is difficult if not impossible to rehome all your roosters. Especially if you are hatching a lot. If its pullets, you can usually sell them for a backyard flock. We eat a lot of chicken because I raise a lot of chickens. Many times I can't even give them away live, and I am not going to process a chicken to give away.

You can choose to "cull" from your perpetuation pen to your production pen or personal egg laying pen, but yes, typically it means kill and in many cases eat.

Last year my wife, 8 kids and I "culled" 217 buckeyes, all were dined upon, I don't have multiple flocks and I don't sell full grown birds unless they are SOP (standard of perfection). The reason I don't sell the "cull" is that I don't want the birds that don't meet SOP to be known as Buckeyes from Buckeye Dave.
