Butchering knives & cleavers for poultry -- which are best?

After going through our "sharpest knives in the house" with little success, we did go to a razor knife and found it to be very handy and effective. Not as fancy (or safe, lol) as the ones shared here. My husband used to be a carpet installer and has a knife referred to as a "Bloody Mary". It does not fold, sharp on 3 sides and you can slice yourself pretty deep without even knowing you did it. Blades are fairly cheap, and the knife was easy to clean. I WOULD NOT recommend it for inexperienced users. My husband worked for a disaster restoration crew - the boss did not allow them to use this type of knife due to ease of injury. For us, we had it on hand and have several years experience - it worked nicely in a pinch.

I see the benefits of tools posted here - and we have a Cabela's close by, should make shopping fairly easy. I love being able to process with a minimum amount of tools.
