butchering right now...what is the hair?

We've plucked but there's still "hair" on the bird that I can't get off. These are Rhode Island Red hens about 4 months old. I haven't plucked the Buff orp hens yet, 4 months old also. Should we just skin them and be done? We really want to leave the skin on for freezer burn protection.

I am not sure what the hair is but dh usually uses a blow torch to burn them off.

I just use a lit candle, that's how my grandmother showed me. Just make sure you don't hold it too long in one spot, cuz it can burn the skin.

but isn't a torch going to be dangerous if the bird decides to fart at the same time?

snomom~~Might I ask.....why are you butchering such young hens, wouldn' you want them for eggs?
