I've read that they are less 'farty' if you harvest after the frost.Sunchokes are very sweet and I use them like potatoes. Fantastic alongside eggs and bacon. However, you have to get used to them slowly because they have lots of inulin in them and most people do not regularly eat plants with lots of inulin. If you overindulge too quickly, you will get very gassy and feel like a colicky horse. Inulin is a great fiber for diabetics as it does not cause spikes and such when digested.
