Last week, I emptied a box of powdered milk making bread. I was breaking down the box for recycle and saw the use by date: Jan 2011. I've been using it to make bread (only need 1/2 cup per recipe) for 6 months...

Often the dates on things are for rotating stock purposes. I doubt that powdered milk would go bad on you
