We use 8 eggs every weekend for bacon and eggs for breakfast. So, 20 a week with a frittata, and even more for baking.Um, in "high season" you only need maybe 2 chickens to make 1 frittata per week. In the down time it doesn't matter how many chickens you have since they aren't laying
I don't know if the pullets who started laying in November will lay next winter. I have one pullet who has yet to start (at 38 weeks!), but she better make up for it next winter!

I plan to water glass some eggs this summer/fall to have some for the "lean times."
