I've heard that about duck eggs and baking, but never tried one of those either. I've heard some people say they are identical to chicken eggs and some say they are more "rich" or "eggy" tasting. What was it for you?
I found them rubbery compared to chicken eggs and the yolks seemed proportional larger.

The yolk is my favorite part of a chicken egg, but a rubbery white I don't think I'd care for. I scrambled a goose egg the other day for the dogs and it was really spongey. It tasted good, but just a different texture. I'll have to quit being a wuss one of these days and actually eat one, haha.
