Steers are castrated, bulls are not. I think organic is great and we try to keep the injectables to a minimum, but we do vaccinate and if someone is sick they get an antibiotic. No steroids here, though! What the FDA lets slide as organic here is pretty ridiculous. Like "free range" or "cage free", very similarly misleading.

Okay, that makes sense. None of my uncles were castrated.
From what I can remember the organic certificate took him five years to get. I don't know if this was the norm or because the people who bought the beef were particularly fussy about their reputation.

North Texas has an abundance of cockelbur. It grows proliferatively where pastures or fields are not melted mowed, also tends to like moist soils.

It's only now I've reread it I see your possible confusion.

I've got an interesting week coming up.
We've got a rat problem. I've got to try to borrow an air rifle. The people who are responsible for this rat problem because they won't invest in any form of control are going on holiday.
I have a chance to do something about the rats. There are five main lairs. I need to kill the mums. I know who they are and where they live but they are very smart. They have babies maybe four or five time a year. The owls and other predators pick most of the babies off.
One day I might see 20 or 30 young rats in an evenings rounds and slowly the numbers decrease until she has the next lot and it all starts over again.

Rats!

Hope you can eliminate at least most of them!
