Good morning, Cafe and thanks for the coffee.
We've got very nice weather today so I've got a load in the washer that I will hang on the line when done.
I finally got that stupid window installed... while DH watched my back to keep Fabio away as I had to use his most hated power driver.
After we finished installing the window, we watched a little chicken TV. Captain finally made a move for one of Fabios favorite hens, Olivia. For such a squatty body, Fabio sure can move when he wants to! Cappy went flying and Olivia did not get the obligatory peck to the head that Fabio delivers to the pullets when driving Cap away. Cap then went after a pullet and got the same treatment.
That testosterone is some evil powerful stuff. Makes a young man completely retarded.

Yesterday I seemed to really be on my cooking game! Brunch was outstanding as well as the dinner. I really need to make that Indian-style apricot chicken more. The flavors are so good. I use a crock pot to make it. Got the recipe from a Paleo Crock Pot cookbook Mom got for me for Christmas last year.

Okay. Here it is. I am giving it to you with my modifications as I usually modify the spices to suit me.

6 skinless boneless thighs (you can use bone in but I prefer not to)
salt and black pepper
1 Tbsp olive oil
1 large sweet onion, chopped
6 cloves garlic, minced
2-3 Tbsp peeled,grated fresh ginger
1 tsp cinnamon
1/8 tsp allspice
1 14.5 oz can diced tomatoes
1/2 c chicken broth
12 oz dried apricots
1 Tbsp dried parsley or use 2 Tbsp fresh chopped parsley
  1. Coat inside of the Crock Pot with thin coat of oil. Season chicken with salt and pepper. Heat oil in large skillet over medium-high heat. Brown chicken on all sides. Place browned chicken in Crock Pot.
  2. Add onion to skillet; cook and stir 3-5 minutes or until translucent. Stir in garlic, ginger, cinnamon and allspice; cook and stir 15-30 seconds or until fragrant. Add tomatoes and broth; cook 2-3 minutes until mixture is heated through. Pour into Crock Pot. Sprinkle with parsley.
  3. Stir in apricots. Cover and cook on LOW for 5-6 hours or on HIGH 3-4 hours.

I've had a look at the books but I don't know anything about Paleo cooking and I'm hoping DL will give me the name of a book/s that she has found to be good.

I've only used a few of the recipes but the book is by Crock-Pot and it simply titled PALEO Slow Cooking, Vol. 1.

If you want to learn more about the Paleo lifestyle, I highly recommend the book, The Paleo Solution by Robb Wolf. You can find it on Amazon but I recommend eBay as you can buy a used copy for much less there.
