BYC Café

Good morning! Thanks for the coffee and the pics of the frost flowers. Very cool!
Welcome TX Chick! Just grab a seat and sit for a bit...
I slept well after spending the day toddler sitting. That is work! Now to return to the regularly scheduled program, hauling firewood! LOL!
Our first real chance of snow will be on Sunday, flurries and rain.

Yes... we do. Welcome! Grab yourself a mug and doctor it up however you like. Check the fridge. Sometimes patrons bring in fresh baked goods for everyone to enjoy (wink, wink, hint, hint).
Just so happens today was baking day. I made an assortment of Sausage and Bacon Egg Bites, and some Savory French Toast Muffins with Bacon. I’ll put some out in a basket.

I prefer Iced Chai Latte so will stock some in the fridge.

Recipe? Are they Paleo?
They are a slight variation of a Keto recipe I found (I’m not Keto but that is one of the best recipes I found). Not sure if they would count as Paleo. All I put in them was a dozen eggs (because so have over 12 dozen in the fridge 🙈), 1 cup cheddar cheese, 1/2 cup milk, 2 cups cooked meat (in other words 1 cup sausage in those 6 and 1 cup bacon in the other six), and 1/2 teaspoon salt. And in a few of the sausage I added a little sautéed onion and bell pepper. Pour in muffin pan (I love using silicone baking cups, so much easier to pop them out). Bake at 350F for about 20 minutes until eggs are set. This was my first time to make them and I think they turned out pretty good. Since I was making a single batch of egg mixture but wanted to make two different flavors of meat I put the meat in the muffin cups first then poured in the egg/cheese mixture and stirred a little bit. You can also reduce the eggs to 8 and add 1 cup milk or cream instead of 1/2 cup.
