I found this video that has some nice footage of different types of grafting. Makes it look so easy. I think key is having a good sharp knife or three.
Apples and pear are fairly easy . The difficult trees are the ones that wake up late . Like nut trees , Mulberry and persimmon . These you need to wait for some active growth as they are slow to heal .
Plum and peaches are usually budded in July but can be done in spring . Again they need to be pushing leaves for best results .
 
Here is the broccoli and cauliflower I pulled up and the netting over the bed. I have not got the stakes in yet. We had some strong winds come thru last night and knocked over my large tomato plant and knocked off some tomato's. I was scared it broke off but luckily it did not.

They were covered in the little green worms. So I yanked em.
