Cake frosting help.

We are on a very tight budget right now and I am trying to cut corners wherever I can. I have a really good cake recipe that doesn't use butter but all the frosting recipes I come across all use butter. I only use real butter because margarine is so bad for your health but I try not to use any more than I have to because butter is so expensive.

If anyone has a good frosting recipe with no or a very small amount of butter I’d appreciate it if you could share it.
 
I don't know what kind of cake you're making, but if it's chocolate you can always make peanut butter frosting. Use about 1/2 cup of creamy peanut butter, a splash of milk and vanilla, and slowly beat in a couple cups of powdered sugar until it reaches frosting consistency.
 
shortening, powdered sugar, vanilla and whatever else you want to flavor it with. makes very fluffy frosting! i would add a tblspoon of margarine or butter though but it works great in a pinch. not really weird when you notice that this is what most commercial frostings are made of anyways.
 
BettyR -- Just thought I'd pass this along -- I buy my butter at Sam's Club. It is $7.62 for 4 one pound packages. It's the cheapest I've found -- except around holidays the regular grocery stores may have it for a better deal. I did find it once for $1.00 for a one pound package. I stocked up big time! Packed it away in the freezer.

Thank the good Lord for lots of eggs. My chickens have about an acre to forage on and they never eat all the food I put out for them each day so I only have to buy feed about once every three weeks and that helps a lot. With lots of eggs and a $1.69 bag of flour you can make lots of good stuff.
 
Since Easter is coming up, the regular grocery stores should have butter for an even better price than Sam's Club. I hate it when renewal comes up! Just another bill, right?

I'm glad the chickens are out ranging again, too -- cuts way back on the feed bill!
