I didn't have anyone with me to take pictures this time.
It looks yummy! I love duck.

Sometime in the next week or so, I plan to process a batch of bobwhite quail. I've never eaten quail before, so this will be an adventure. I think I'm going to do three by the skinning process. If we like them, I'll make the effort to pluck the rest. If we don't like them, I'll sell them live. They JUST started to lay, so I popped the egg into the incubator with my coturnix eggs.

Pennes are listed as being Dual Purpose. It may take some breeding to get them Big. I read that to get big Cockerels, you need to breed the biggest Roos. It said that you don't need to worry about the Hens size as long as the Hen was not really small compared to the others. This was for Dual Purpose breeds.

We will see with these. They may already be big.

black penedesenca are the largest breed for meat and eggs. I should have those laying by spring if all goes as planned.
