The new Brinsea advance incubators have it built into the programming so I turn it on @ day 8 of incubation.

For the Genesis, I turn it off, take the top off and go do chicken chores. After the chores are done, I go back and turn the incubator back on. That helps me remember to turn it back on.

New studies(during the last year) shows that the cool down cycle is good for duck eggs too. I do not know if they have finished the Goose and other fowl yet.
This should be done every day after day 8, once per day?

Yes, once per day for two hours form day 8 to day 10.

It does not change hatch day. During the NYD hatch, I had an Australorp hatch on day 19. Poor thing was lonely until day 21 when the rest hatched.

Yep, must be a boy.

I'm so eggcited my first hatch of 2015 gets moved into the Hatcher tonight, it'll be bantams over the next three days then lf for the four days after that =) time to wipe the dust off the heat lamps lol wish I had a plate but my premier catalog just came today so maybe I'll remedy that... probably just blow my budget and order fancy feather footed chicks instead ;)

I've got some silkies hatching, due tomorrow. One pipped last night, and started zipping, but has done nothing since yesterday afternoon. Its chirping and tapping inside the egg. Should I help it? I know how, I've done it many times before, I just want a second opinion.

Follow the 24 hour guide line. If it is tapping and chirping it will likely make it out. I have better outcomes if I leave them alone.

Is this the first one to hatch? I usually have more problems with the last ones to hatch.

Hope your hatches go better than mine. I had a batch of Bresse eggs with a couple of Buckeyes and Dominiques thrown in that were du for lockdown today. I candles them and out of 14 eggs only 1 looks like it MIGHT be on track. The others never even started. These were from shipped eggs from one of the auction threads here. The seller was back east and kept delaying shipping but not communicating with me. I had to email her repeatedly to get any info. Purchased on 2/11/15 and no egg until 2/28/15. . I am so disappointed....I was really looking forward to those Bresse chicks.......
