When processing multiple birds alone, is it best to do one from start to finish, the next one or can I do them assemvly line method. I would kill all 3, then pluck all 3 then eviscerate all 3. The time would not be significant (Max of about 3 hours from start to finish)

We kill everyone at once. Then do all outside stuff then go in and gut and vaccum seal.

It depends on how fast you are at plucking and eviscerating. It is best to get to the second one before it is in rigor.

I usually start on the second one after the first one is plucked. It will have bled out and be ready for the scalding pot after the first on is cooling on ice. It does not take me three hours to process three that way.

You have help!

For a single person, the last one will be in rigor before you can get to it.
Perfect! Then I can get inside where it is cool quicker. Thanks....

Nah mario does it by himself often. Difference is: we skin. Never had rigor issues. The timer we have is too many meat bees.

Speaking of processing anyone up to trying to split a sacramento min order? Im about 50% sure they take ducks but I dont think I will have the min amount of birds. I think it will be 2 weeks to be ready.

Thank you, Kathy! I'll stock up on this for next time :( I have used the human kind on them as well as the oyster shell but had t seen that injectable. I appreciate it

They have a minimum order?
Manteca doesn't but I think they're close to $5 a bird on processing
