Yup Ron, I used my Kitchen Aid. It still took longer than whipping cream from the store - I kept waiting and waiting, then whoosh, it separated. I'm going to get some more (the lady wants to trade milk for my jam and/or pullet culls - works for me) and make mozzarella cheese. (have you seen how much mozzarella is in the store these days?

It's crazy!) I've always heard mozzarella cheese is easy to make. (I've only made chevre) So I'm going to give it a shot.


Amy - just take the cream off the top and whip past whipping cream. It will look curdled (not done yet) and keep mixing. When it is done, the butter will clump together and you will see the separation of the buttermilk. It's super easy with a stand mixer. I've always made it after the Holidays with any leftover cream. (no sense throwing it out)

Haven't tried Ricotta either - though I've been looking at Mary's blog when she made it. I LOVE ricotta, but the DH doesn't.

Make it homemade, literally takes minutes. Then of course how firm depends on how long you strain it. Try that with your DH, it doesn't even taste like the same stuff as store bought.

Love the butter photo. We are at our house in Cabo attending cooking classes and I had just asked the chef today about the color of the butter, because here it is very bright yellow the same as yours. They said it's because the cows are fed much more grain/corn than in the states. Interesting..
 
I was without internet for five days! finally getting all caught up. And of course, here I am reading BYC and I am once again hungry!! I'm gonna have to stop reading this after 10pm. :-)

updates here, got four amazing tolbunt polish from cheryl and 2 jubilee roos. Yay! Thx! My whole family has already fallen in love with the polish. they are so fun and cute and surprisingly docile for what I was expecting. they are the new favorite chicken to watch.

i'm winding up my last hatches for a bit. Yay! And I discovered that the barn isn't a great place for me to brood my chicks. I was having quite a few losses then moved the next batches to the garage and had 1 loss in like 100 chicks and it was just weak from hatch and never really took off. I also changed my brooder style and used an old crib to make into a brooder. I'll have to take a pic. Sad use of a crib but no on will take them as donations so they are easy to get for free. :-)

Oh, and most importantly, we had our baby! Zachariah David born on wednesday. 7 lb, 8 oz. healthy happy little dude!!

A week long cooking/eating/drinking adventure here in Cabo.  We visited a ranch here in Cabo and of course were drawn to the chicken pen. We noticed that one of the chicks was on the outside of the pen, away from its momma. So Larry chased after the chick all the while momma hen is attacking Larry through the fencing!  He finally catches the chick and returns it to it's momma! WHEW!

We have also started to meet many people working with the community becoming sustainable using permaculture methods and wanting to raise chickens (but don’t know how to go about it!)  On our way to our dream....  :) 

Also met many restaurant owners at the ranch party that are more than excited about me raising a form the Bresse here!  I’m hoping to be able to use the Cabo Bresse to subsidize the cost of water and land for community projects! 














What an amazing project! And I can just imagine Larry running after that chick with mom squawking along.

We just got back from Maui and were really surprised to see only two roosters! That was it, and I swear it was the same roo. He was wandering around the car rental area when we came in and I saw an identical one near the airport going home. Both times just a lone rooster, no hens or other roos and I never saw any other chickens on the island.

Oh my gosh Jeff, what a cutie patootie! Congratulations! I couldn't even tell your wife was pregnant when I met her to buy the Blue Marans from you in Sept! He looks like your other two!

Glad your changes have worked for you, I know you we're working hard to get your losses down.

Now you see why I started breeding polish! I fell in love with one my friend gave me and had a hard time finding more. They just make you laugh and they're so cool with being handled. I need to talk to Cheryl about getting some of hers too. I PM'd about a year ago but I think it was around when her back was bothering her, or maybe she answered and I missed because of my back surgeries! Anyway, I love the Polish.
