Can anyone explain why ?

It is doing fairly well it is being picked by the others it does have black eyes and it has the normal pharoh color on its head and on a spot on its back ill try to get pics tomorrow
 
Sounds like this colour is genetic and recessive! You should go buy a lotto ticket!;)
 
white is recessive in brown quail like red is recessive in black cows.

the "splits", brown quail carrying a white allele, do look slightly different if you are familiar with them.
 
I do have a few birds that have white feathers mixed in the brown, mostly in or below the wing. They showed up in about the 3rd generation. What you say makes sense.
