Can I have some Turkey info please?

I am interested in getting some turkeys this year. I would like to know:
-What a heritage breed is
-If you could eat a Bourbon Red (the turkeys I would like to get)
-How to raise them
-What to feed them
-What hatcheries to buy from
-Other info I need to know

-What a heritage breed is
Heritage turkeys go way back. They are not the commercal turkeys you see in the store. But at one time that commercal turkey came from these. The Com. turkey grows out really really fast. Has a a lot of trouble with fluid in the heart and leg problems. Heritage turkeys breast bone longer and the legs are longer. Com turkey don't breed naturally and heritage do. Com turkeys do not fly as much as Heritage turkeys do. A Heritage turkey will need 8 eights or more to grow out. Com need to be butchered before the seven months old.
