No yoga mats! She’ll definitely chew them and may ingest them - not good. Blankets are ok, she’ll probably shred them up but they don’t usually eat them, they’ll just organize the shreds into a nice bunny nest.
Ideally I’d say put a layer of vinyl floor like you plan to, make sure all the edges and corners are outside the pen so she won’t chew it. I would then cover half the floor space with with rough pine boards (untreated!) to give her a non-slip surface to play and dig on, a nice edge to chew which is great for her teeth, and something to do, which is good for boredom.
For my litter box I used a big plastic tote with a hole cut in one end, a few inches of regular kitty litter and a handful of hay, my buns loved it! They had a safe “cave” to poop and nap in, and a bit of hay for chewing.
For extra fun, poke a few small holes in the lid and insert a carrot or piece of celery through, believe me your bun will be delighted!
