Dixville, is in southern Quebec, about 40 km south of Sherbrooke.It actually borders the Vermont/ New Hampshire border. Can you get me the name of the cousin from St-Canut that sells gamebirds? That way I can start making up a list of potentiel sellers. I know there is alot of info on this site but I can't find much on partridges.

You'll need to crock pot those roosters for quite awhile to get them tender. I don't know if you're aware but after dressing out the roosters you should leave them in the frig. for about 3 days to get over rigor mortis otherwise they will be tougher than shoe leather.

Hi JJ, we just butchered 18 roosters a couple of weeks ago, I slow roasted one and it was delicious, very moist and not tough at all.
I had all of them together in a hugh pen, they will fight but once the order is arranged they are fine. Mine were all hatched last spring and summer.
The less stress on them when they are butchered the better, and yes this one I roasted had been in the fridge for a couple of days.

Hi, do you suggest that I cook these butchered roosters with-in 3 days or can I freeze them after 3 days.

It's-10 here today and we just got 30+ cm dumped on us last night.

Howdy, fellow Canadians. Sheri, here. I am in southeast Saskatchewan now (near Yorkton) but was born and raised in Kamloops, BC. I've been reading the posts on this thread, looking for Canadian hatcheries or breeders. I'm just getting into chickens (I raise goats, otherwise) and I'm thinking about some isa brown layers and some buff orpingtons or brahmas but haven't had much luck finding Canadian sources.

I'm not having any luck finding Blue Naked neck Turken hatching eggs here in Canada either.
There are many breeders out West and you shouldn't have much trouble finding orps and brahmas.
The Isa browns are the way to go for nice sized brown eggs. Your local feed store or co-op should be ordering them for Spring sales and they may be going by different names such as Bovans and are a sex-link chicken. Good luck finding them.
