Canning and Home preserving

My dogs get away with FAR to much.
The coon hound is still recovering from being super sick so got used to me making soup for her.
The Pitsky is to flipping quick.
The bloodhound is 14 weeks old and can reach the middle of the counter with her muzzle! She is learning "leave it" and "nose off".

I am Learning to listen to what my body tells me is important... for a time I was very cold no matter what clothing I wore I was shivering... I took stock... Not only wasn't I eating enough I wasn't getting enough protein. And so it goes.

That's why I can in small jars because I cant eat more than seven ounces at a time. Half pint of soup half pint of stew... I suspect that half pint will do me for two meals lunch and dinner.

I was very debilitated from carrying almost four hundred pounds. Knees worn out... though my arthritis doesn't scream at me at night like it used to. That's why I am waiting to move home till February or March. I hope to be able to walk easier and not be short of breath... I am having handicapped steps made and a large landing for the front porch. with handrails. I have two other places that need good steps with handrails.

So A canning and food preservation I go... When I start raising poultry am going to raise Wellsummers. Love the LF eggsies and their calm sturdy nature. Making canned chicken and chicken soup... pickled eggs... As well as Duck Jerky and Prosciutto.

I also want to raise Guinea fowl for sale. Keets and Hatching eggs. They do well here in the desert. Very much like their native land.

I might even raise some quail. On the fence about that.

bwhahahaah.... Crack that whip... you are talking to a former eight shots per day coffee snob... Had to quit cold turkey because of cancer surgery... When I woke up from the anesthesia they asked me how I felt..... PAIN.... they didnt aske and immediatly gave me a shot of Morphine... Only took the edge off my head ache.

I was back drinking single shot espresso drinks after recovery... Short lived because they made me feel like crap. After Gastric Sleeve surgery again NO caffien. Not even sodas because the staples in my stommach needed time to heal ... its been six months since the Gastric surgery and I am down 106 pounds. Another 100 to go and game is on. Caffien stimulates your pancreas to trigger hunger pains. Thank goodness the surgery took out the part of the stommach that tells you you are hungry.

So for now No Caffien.... Love the smell love the taste but it does a number on my weight loss efforts.

But how many can you keep up with
I started with six finches and two parakeets. Finches are prolific breeders so by the end of a year I had about twenty... Parakeets rasied up two clutches so I added another to keep the gene pool viable. I had about ten parakeets.

I did the same wiith the zebra finches adding some new blood. I also splurged and bought a pair of Canarys... Weather is pretty mild here in the spring a bit of rain but Those canarys were a great addition... I would love to have a pair again. That male had such a beautiful song...

The budgies were hilarius... I had one that liked to hang upside down on the perch...

I love bacon, and heard that there is supposed to be a way to can it by itself!

I have canned bacon as explained back on page 20, but I did not like how it turned out. I raw packed the jars and when I took it out most of the fat had disintegrated, so when I tried to fry it up the fat that was left went away and all I basically had left was bacon bits. Hey better then no bacon but not what I was hoping for. I think I may try they par cooked method.
