Canning and Home preserving

a bit of history here Jerkey of course is a way to preserve meat... early on it was used to make soups and stews. Cut or torn into chunks and added to cooking broth. The salt and pepper were preservatives. Pepper Deters bugs and salt preserves the meat.

Jerky
is a form of meat preservation in which fresh meat is dried to prevent it from spoiling. The word “jerky” comes from a South American native tribe called the Quechua, originally part of the ancient Inca empire, as early as 1550. They called it ch'arki, which means “to burn (meat)”

The Quechua gave us many things.

I like this. It is a dry rub, very easy. I thought I posted this this morning early but now I can't find it. Guess I wasn't awake yet... :he

You guys are triggering my "want" buttons now, lol! Suddenly I want a pressure canner and a meat slicer. Sigh. Off to have a cup of decaff and take a deep breath.

Oh, I have canned tomatoes, peaches, apricots, grape juice and many jellies. Pears too but didn't like 'em, too gritty. I have done more preserving in the freezer. Cherries, peaches, tomatoes, grapes (yum, mini popsicles!). Loaves ready to bake. Chicken broth. Hmm. That's all that comes to mind at the moment.

... Loaves ready to bake.

I love making homemade bread, but I've never frozen yeast bread dough. Do you shape the dough before freezing or just freeze the dough, thaw, raise, then bake? In other words, what do you do when you freeze it? I think my DH will like having bread dough in the freezer alongside our homemade pizza dough.

I need to buy a dehydrator so I can make some good jerky. I don't like my stove lol we have a love hate relationship.

It is worth it to invest in a good dehydrator. I don't mean expensive but just not bottom of the line.
We bought a oster brand and it is hard to clean as well as failing to run halfway through drying jerky.
I replaced it with an Open Country one that cleans up easily and dried in half the time.

This is the one we bought that works well.
