Canning and Home preserving

Way back when, we just hung the slabs of bacon in a cool place and cut off slices as needed. They are curing bacon differently today than they did back then. The way they cure it now, it just doesn't keep well without refrigeration.
Thats how dads family did it along with Hams.... Hung in the pump house.... The rest of the pig got salted and hung there too. They lived in the plains of Texas and refigeration was non existant. I imagine some things were hung in the milking parlor thought... I believe they kept blocks of ice in there.

Some of them are 10 years. Yes, I might be in the grave by 25 years too. Means I only have to buy it once. :lau

That's funny! I bought winter boots and declared that they were the last ones I would need to buy. Said that my new golf clubs were going to take me to the grave. Now I can plan my canning to do the same. :lau

I bought a new truck 21 years ago and expect it to be my last vehicle.
