Thats how dads family did it along with Hams.... Hung in the pump house.... The rest of the pig got salted and hung there too. They lived in the plains of Texas and refigeration was non existant. I imagine some things were hung in the milking parlor thought... I believe they kept blocks of ice in there.Way back when, we just hung the slabs of bacon in a cool place and cut off slices as needed. They are curing bacon differently today than they did back then. The way they cure it now, it just doesn't keep well without refrigeration.
