Canning for Dummies

I have also been toying with the idea of canning, something I've never been involved in. This thread has been very informative. Thanks to the OP that posted the topic, and thanks to all those that have contributed answers and suggestions.
 
Well, I got a nibble on Freecycle today for my request for a pressure canner. Someone e-mailed me asking if I still needed one. I told her I needed at least 15 quart and haven't heard back from her yet. Hoping . . .
 
UPDATE: A woman from church said her mom has a pressure canner and a food mill in her cellar that she will give to me. Her mom and dad are moving to assisted living center and cleaning out their home.

Another woman at church will let me borrow her pressure canner and food mill too. So, as soon as I receive my canning bible, I will read it cover to cover (I'm a very fast reader, this should take only a couple of hours max) to prep for apple sauce and soup canning.

If you buy a pressure canner make sure it holds quart jars. My sister bought a Mirror pressure canner and the first one was an inch to short for quart jars and the second only held 4 quart jars. She found a Presto (I have one already) and it holds 7 quart and I think you can double deck the pints to hold 14.

Ball Blue Book is the best. The pressure canner will also have a recipe book. I have had my pressure canner for four years and just started to use it for canning my tomato suace. I already used it to cook down my apples for sauce and to process them in jars. Because of time & energy it saves I think I am going to convert to pressure canning 100% versus the cold water bath.
