You need a double broiler. You can do this by putting a pan inside a sauce pan with a little water in the bottom pan. The steam or heat of the water will be against the bottom of the pan with the chocolate in it and melt it with out burning it.
Do you like cinnamon? Can you find those little bottles of cinnamon flavoring? I use to make cinnamon tooth picks with that liquid as a kid. Kids always loved it then. Anyways if you can put some of that liquid in the red dipping sauce stir it up and then dip your apples. You could also then dip the apple in red hots after the red sauce.
