I finally made a batch of this the other day and here's my husband's reaction. "You need to make four batches of this a day until we're out of apples and stop messing around with those pint thingys and use the quarts." I think he likes it.

Exactly, Pectin is controlled by boil the right amount of time and have exactly equal sugars. I don't think a crockpot will get you the right temps and let you work quickly with the pectin.
I cook down my apples ( just the apples) in the crockpot overnight, then I transfer to a sauce pan and do my thing.
I hate standing over a sauce pan and I like to start early AM so I have found this way easiest for me and it speeds thing up.
It works just fine;)
