cast iron pan??

i always use soap and water to clean my pot i dry it with a regular towel and put it on the stove on low heat and pour a little coating of veg oil and wipe or spread it out with paper towels
 
Never ever ever put it in the dishwasher. Around here that's a hanging offense

Mine are very old. If I make cornbread in one I just wipe it off with paper towels afterwards, comes whistle clean. If I do have to put one down in soap and water it's just for a minute and then I use a plastic Brillo. Dry the pan on top of a burner on the stove, low heat and wipe down with a paper towel with Crisco on it. I've had mine for years and years.

As said seasoning is preparing the pan with Crisco or lard wipe downs.
 
My grandmother ran a Cafe and used Cast Iron all her life, even in the Cafe where you have to use soap & Water and Bleach rinse, she would wash her pans, then lightly coat with lard, stuff them in the oven over night.

They are wonderful to use.
 
Don't put it in the dishwasher!!! It will rust. I have several cast iron pans and I LOVE them. Treated properly they are more non stick than no stick pans, and MUCH better for you.

I store mine inside the oven and I also like to stick them in there when it's just been in use. I keep them coated with coconut oil or lard when not in use (never veg oil) and for the first while used them only for frying fatty stuff like bacon. After a few months they'll be well seasoned and you can fry pretty much anything in them.

To prepare it at the beginning, you will want to coat them really well inside and out with lard or coconut oil and put them into the oven upside down (with something under to catch any drips) at about 350 for 3 hours or more. Repeat a couple more times in the next week or two if possible. The more you use them the more seasoned they get.

All I need to do to clean mine is wipe them out with a paper towel. Once in a while if something gets stuck that won't wipe out with paper towel I use salt as an abrasive and a scrubbing brush and elbow grease. If I do something like a curry in them I use a bit of water too. I heat them a bit to dry them off and put more lard in them to store them.
 
I asked for cast iron pans for Christmas and got them. Only problem is they say they are pre-seasoned and ready to use. On the back of the label it says to wash them in warm water and dry thoroughly, then to prepare the surface with cooking spray or vegetable oil before using. The pan and griddle I got with these labels are bumpy though. Is that supposed to be the preseasoning? Anybody know. I would think things would stick to it. Maybe I should do up some bacon in it for the first time.

Its great that I got cast iron pans, but its thrown me off to be getting these with a finish on them. It almost makes me want to burn it off and start from the beginning. Only problem is my oven is broke and its Winter so I can't do it outside. I don't know if its some kind of teflon (which I don't want) or what.

Any thoughts or words of wisdom.

My cast iron is really well seasoned. Im not sure if this will work for a pan that isnt. After I use my cast iron pan I pour a handful of salt into it while it is still hot and use a paper towel to scour and scrub the pan. I give it a quick rinse in plain hot water to remove the salt and any cooking debris the salt loosened then put it back on the burner to dry. As soon as the water is gone I take a paper towel and use a fat of one kind or another to oil the iron then turn the heat off and let it cool on the burner. By the tme dinner is eaten and dishes are ready to be done my skillet is clean, cooled oiled and ready for the next meal. I never have anything stick to my pan and its always ready for the next meal.I love cast iron somehow the food just tastes better coming out of it than it does from non stick cookware
 
I love my cast iron cookware, I never wash them, just rinse them out and wipe with a bacon greased paper towel from the coffee can set on the back of stove where I save the drippings. I have a griddle I got at a flea market that was designed to set on a woodburning cookstove. I love my dutch oven simmering ham hocks and beans.
