taking them off the roost is the easiest way, catch them first thing in the morning before you let them out.
My great grandmother (she was probably 85 or so) would go in at night take them off the roost, then tie their feet together with butchers string and lay them on the floor of the coop. This way in the morning after the water was boiling and she had several cups of coffee she would walk in and the chickens were very easy to catch.
