Chaos in the coop

They are more active at night but if you have a few and they are hungry, they can be active and seen during the day also.

Rats are like hens, sort of. There are more than one species of rats, but there are numerous strains of hens. I'll leave you to figure it out yourself but if you're curious start looking at Brown and at Norway rats.
 
Rats are definitely a possibility and crow or jackdaw type birds will also target eggs if they can access your coop. I battled both rats and jackdaws last year in this respect. Rats are pretty much always an on going problem when you have poultry. Once they start coming during the day, you usually have a serious infestation and they will almost certainly also be targeting your feeders if it is rats. They will jump up onto hanging feeders and even some of those treadle ones can be activated by them as they group together on the tread pad to weigh it down... far cleverer creatures than they get credit for. That said, the pile of oyster shell being moved is very odd and I too would wonder about someone messing with the contents of your coop!
