Chicken Jerky

I got two big old dehydrators off Freecycle recently and have dried just about everything that isnt nailed down. My stepson loves it and is always "cooking" something in the dessicators.

But I haven't tried chicken. I will. Thanks, John for this.

Do you find that certain parts of the bird make for better jerky? And if so, which?
 
That looks great. My husband doesn't eat beef or pork and store bought chicken jerky is pricey. I'll need to see about making some. The dehydrator that we have doesn't have a temp control on it. I'd be worried that it might not get hot enough. But i'd love to give it a try.

How many pounds of chicken is the recipe for?

Looks like our dehydrator warms to about 180 degrees...how long would that take, maybe 6 hours?

Sounds like a road trip! I LOVE Jerky - I make it with fresh venison during hunting season and I will be trying this with my first fall turkey this year!

Yeah, one was given by a friend of mine, as it turns out. The other was on older model, with extra trays. I have to applaud Lady Luck on these.

Poultry Cooking: Whether you are cooking, smoking or jerking poultry the internal temperature must go to at least 165° F. Some dehydrators will not heat into the safe range. Many people do it at lower temps without any problems however it is not recommended.
