You'll find them still stuck next to the spine in grocery store birds and grocery store leg quarters all the time.

As far as I'm concerned they go into the stock pot just like the rest of the stuff. And they get strained out and discarded just like everything else that isn't muscle meat.

I never could develop a taste for eating the giblets -- the heart isn't so bad, but the mushy texture of the liver and the rubbery texture of the gizzards are not for me.
