Okay so I want to make sure I'm completely understanding the situation. This is where I'm at so far:
you moved your personal coop for the hens to your neighbors property so they could easily care for them when you went on holiday. When you returned the coop was very damp as well as their food. They did not come in contact with any other live chickens.
If that's all correct then I think you're probably dealing with a respiratory infection not cocci. The runny poops are why that's been suggested, but general illness can cause that as well. Does her poop look like it has any blood in it? Also, have you checked her vent to see if there's any redness or swelling? Not laying for months is a little concerning and it's possible she got so sick so fast from the housing conditions because she was already ill, such as being egg bound or infected vent.
Considering all that then no, I do not believe she is contagious to humans, but like with anything that's sick, put her in a non-busy spot in the house and follow good hygiene. Also, throw out the damp food immediately and buy a new bag as well as fully clean and disinfect and dry out the coop.
