White Chicken Chili
This is a LOT of food...I make this for family gatherings in our 5 qt crock pot and it feeds a lot of people! You can downsize to fit your needs.
3 cans of green chiles (or you can do jalapenos, if you like it spicier), NOT drained
3 shredded, cooked boneless/skinless chicken breasts--tip: I boil mine in chicken broth with one can of green chiles & 1/2 a packet of White Chicken Chili seasoning (McCormick's) until cooked & then drain off the SOME water & let cool before shredding
1 chopped onion (yellow or white)
2 cans of corn, drained
2 cans of white beans or great northern beans, drained & rinsed
2 cans of navy beans, drained & rinsed
1 red bell pepper, chopped
1 green bell pepper, chopped
2 packets of White Chicken Chili seasoning (McCormick's), you'd want to use just one in a smaller serving!
Pour the remaining broth into crock pot--probably 2-3 cups' worth for a large one....
Add all of the above into the crock pot. Gently stir everything together to get the seasoning & the stuff all mixed up.
Set on low for 7-8 hours or on high for approx. 3 hours (it's much better if you cook it on low, though!)

So.. you use 3 cans green chiles PLUS another can to boil the chicken in? So 4 cans all together?? Or just 3 total?

These are the larger "small" cans...if that makes sense? I buy the chopped ones...but I have bought the whole ones and then chopped them myself and those come in the larger cans.

I just wanted to mention that in the chicken chili recipe, it says diced canned green peppers. That is green chili peppers, not bell peppers. It's kinda written in chef shorthand, so if you need a translation just ask.

It was 20-30 lbs of white beans.

Hey Writer I bet you don't have any trouble getting frozen green chilis there either do you? I can't find it here in the south--they look at me like I am crazy when I have asked for it at the grocery stores. I have to buy it when I go out west on vacation and bring it home in my suitcase by the cartonful (it comes in a carton like cottage cheese)......I'm talking about the green chili you cook with. I miss it sooo much--those little tiny cans of ortega green chilis just aren't the same thing!!
Frozen chilies? LOL we walk outside and pick it and cook it! We do have frozen though, but it's not local unless you bought it, cooked and froze it yourself.
Just out of curiosity,,, if you make a White Chicken Chili with a Silkie does it become Black Chicken Chili???
