Citrus byproduct ideas PLEASE!!!

We have just managed to secure the contract to remove all fruit and veg from a local greengrocer as long as its on a daily basis and we take everything...including the citrus. The pigs don't like the citrus and the wormfarm won't either. Any byproduct/processing ideas that won't break the bank and might be of use in another form? Posted this on the other forums, but it looks like the chicken bunch are a much livelier crowd...
 
Citrus peels *do* compost, just slowly. Things that will speed (that is, minimize the slowness of) the process: hack/cut/chop them into small pieces, put them in a mixed compost pile rather than mostly-peels, and/or bury them underground instead of in an aboveground pile. They *will* get there eventually, so if you have the space you may as well just put 'em somewhere and forget about them for a while and let them slowly do their stuff.
