Collecting own eggs for incubation...

I don't have a huge flock and currently they are not laying very frequently and I understand why, with it being November-almost-December. So if I collect eggs from my girls and only have 3 in one day, but I'm wanting to get at least 12... Can I hold on to the first 3 for 4 days so I have 12? Would they still be viable? I think I read somewhere that you can wait a week but I wasn't sure if that was accurate.

They can last up to seven days as long as the eggs are stored in the appropriate conditions below 17 degrees centigrade, somewhere clean and make sure to turn them daily.
