Mini rant..............

Tomorrow is my b-day. I want to do something simple like staying out of the heat. Maybe catch a movie or something.

DH took it upon himself to enter the Harley in a motorcycle and car show. :rant He wants me to go with. OH GOODIE, another day of blazing heat stuck in a parking lot all dang day.

Rant over thanks for listening.
HAPPY BIRTHDAY

Thank you. It was an ok kinda day.

Today I am headed out shopping for canning equipment then trying to get some peach jam done as well as a few quarts of tomatoes.

Looking like an interesting day since I have not made jam before.

Happy late birthday! :) And good luck with the jam! I've always wanted to try to make that. So far, I've only done jarring pickles, cherry peppers & jalapeños.

Jam is hard to screw up. Make a peach jalapeno jam as well. On a bagel with cream cheese? Yum!

I'm heading up to bohemian nights in FC. Rodrigo y Gabriella and Nathaniel rateliff and the night sweats are playing tonight.

I doubled the recipe since the calculations made it about 4 jars. I hope I did not mess up by doubling since it is in the water bath stage now. I know it is supposed to be easy but I know people who have ended up with a thin syrup instead of jam. That was a lot of sugar to make it so I hope it turns out well. The peaches I bought were almost to ripe to eat fresh so canning them seemed like a good idea.
It turned into a all out mission to find a canning pot. Finally found one at store number 7.
I still have about 15 pounds of peaches sitting in the kitchen.

Lots of learning to do about canning. It is something I simply did not have time to learn while the kids were little. Now that I have time to garden it seems such a shame to grow it to have it go to waste.

i am glad to hear it. I haven't made jam before, either. SPROUTS used to have pepper roasting days, and the roasted peppers I canned were awesome, even though I am not a talented canner. Hope your jam makes you as happy as my peppers made me. Also hope you have many more - days of happiness, that is, birth or not. Best regards, Laurie in Berthoud

Thank you. I like learning new things so this is turning out interesting to me.

I could hear the lids doing the "pop" after they were put on the cooling rack. I think they will seal well enough. Not sure about the little air bubbles deep in the jam though. I guess it is going to be one of those things that make you go hmmmmmm.

@21hens-incharge When I had a huge peach crop two years ago, I used my crock pot and made peach butter. I love the spices, and didn't have to use so much sugar. It just cooks down - and down - until it's nice and thick and can then be put in jars.

Whatever you do, I 'm sure it will be scrumptious!
