Is it breed standard like how some people crop their dogs ears? or does it serve a different purpose?
Yes, it’s the breed standard for gamefowl. OEGB do get dubbed differently though, their cut is not straight. It’s like this (this is not my bird, it’s my roosters father)

Breed Standard. I also think it serves the purpose of the other rooster can’t grab it in cockfights. (Not saying everyone who dubs is a cockfighter)
Yea a lot of people think of a cockfighters when they see a rooster in a dome pen, on a tie and/or dubbed.
Dubbing can be used for health reasons, for show or even because they get their comb torn by another rooster or predator.

What about his legs? There to big for his body, you gonna shorten them to, so they don't get frostbite? Ow ow ow.

I live in Florida... the coldest it gets here is 60 degrees. Also, the legs are his breeds standard.
You must not know about gamefowl, so embarrassing. :)
