I used to do the same thing. I had to MAKE myself leave it alone. Only opened at 10 and 18. Put water in at 10 and 18 if needed. My hatches were much better.
As for cracking the eggs, I do if I can see something when candled but yet it didn't grow out. The only time I've had a "smell" is if the egg was "bad" and you know well in advance not to open those. They ooze!
