Container of water on top to regulate humidity?

Does anyone use a container of water on top of the incubator to control humidity? I know you have to run a tube through a hole into the incubator, but how do you stop the water flow when you don't need it? Also, does the water go through the tube and then into a dish with a sponge? If anyone has any links and/or pics, I'd appreciate it. We're working on a homemade incubator, and I'd prefer not to have to open it to add water to control humidity.

I have a small tray under where my eggs sit. There is a tube that runs through the side of my incubator. The complete directions on how I built my incubator are on my BYC page if you want to take a look. It's not fancy but it works.
