I want to bake cookies today,(because it is so cold outside and the wind is blowing 25 miles an hour) and I have a ton of banty eggs. I sell all my big ones. Here is my question they are so small do use 2 egg instead of 1 egg??

Yes and I'm in the same boat as you, in fact the fridge is empty other than bantams.the only way we get to eat a big egg is when we get a cracked one.You do need to sample the merchandise every now and then.

anytime your cooking with banty eggs 2 eggs make 1 egg.an if it says use a large egg.then use 3 banty eggs.

Actually when making cakes such as pound cakes that you want the batter to be dark yellow.Use bantams eggs cause they are almost all yolk and therefore richer.
