Corn Bread Bake

It's the holiday time of the year again. I didn't buy stuffing mix at our local grocery store so I thought I'd make it my self to save a trip into town. I wanted to make corn bread to make the stuffing but didn't have any corn meal which is what is normally used in corn bread. I do like to bake so I had some white bread I had made a few days ago but wanted to add corn bread to the mixture. I did have corn flour so I thought I would add some of that to my yeast bread recipe in place of regular all purpose flour. The loaf came out like a brick with very poor texture. I thought and thought because I didn't want to go to town just to get corn meal or stuffing mix and I already had corn flour. I decided to take a different approach. I decided to use the corn flour with all purpose flour and make it like a cake. It worked. I now have a pan type corn bread. This is what I did. I thought I would share.

Corn flour to make corn bread

1 cup milk
1 egg
1/3 cup vegetable oil
1 tsp salt
1 tbs baking powder
1/2 cup sugar
1 1/2 cup all purpose flour ( I used a little extra flour to thicken the batter up some) adjust for the thickness of the batter you want.
1 cup corn flour

Mix the ingredients together and bake in approximately a 9 x 9 cake pan in a 350 oven for 25 to 30 minutes.
